Enable click+hold (tap+hold on mobile) to see options to mark watched
The way this would work is: click/tap marks something as watched always using current date and time, and click & hold (or tap & hold) shows options with calendar to pick a different date/time. Trakt and other sites have this, and I find it very useful.

I would just add that that it should respect whatever default you have set in settings and not just mark with current date. Basically a click uses your choice from settings, but click & hold opens the modal.
I brought this up in the Ideas section on Discord a couple days ago. This is an essential option for those of us who track manually.
